- In another bowl, cream together the butter and brown sugar until light and fluffy.
- Add the molasses, egg, and vanilla, mixing well.
- Gradually add the dry ingredients to the wet mixture, blending until just combined.
- Drop tablespoonfuls of the dough onto a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes until just set. Let cool.
Filling Preparation
- For the filling, beat the cream cheese and heavy cream until smooth, then mix in the powdered sugar.
Assembly
- Spread a generous amount of filling on the flat side of one cookie, then top with another cookie to form a sandwich.
