Ingredients
  

For the cookies
  • 2 cups all-purpose flour Sifted
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar Packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
For the filling
  • 1 cup powdered sugar
  • 1/2 cup cream cheese, softened
  • 1/4 cup heavy cream

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the molasses, egg, and vanilla, mixing well.
  5. Gradually add the dry ingredients to the wet mixture, blending until just combined.
  6. Drop tablespoonfuls of the dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes until just set. Let cool.
Filling Preparation
  1. For the filling, beat the cream cheese and heavy cream until smooth, then mix in the powdered sugar.
Assembly
  1. Spread a generous amount of filling on the flat side of one cookie, then top with another cookie to form a sandwich.
