  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes Use preferred steak cut.
  • 1 medium zucchini, cut into half-moons Adds fiber and nutrition.
  • 3 tablespoons butter
  • 3 cloves garlic, minced Enhances flavor.
  • 1 tablespoon olive oil For cooking the steak.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • to taste Fresh parsley, chopped, for garnish Optional.

Method
 

Preparation
  1. Pat the steak bites dry with paper towels. Season them with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Add steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until browned. Remove steak from the skillet and set aside.
  2. Add butter to the same skillet. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
  3. Add the zucchini to the skillet. Cook for 3-5 minutes, stirring occasionally, until tender-crisp.
  4. Return the steak bites to the skillet. Toss everything together to coat with the garlic butter.
  5. Cook for another 1-2 minutes until the steak is heated through.
  6. Garnish with fresh parsley if desired. Serve immediately.

Notes

For a lighter version, use grass-fed beef and reduce butter. Great for meal prep and can be served with leafy greens or cauliflower rice.
