Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish. Coat it with flour-infused baking spray and line the bottom and sides with parchment paper.
- In a spacious mixing bowl, combine the white sugar, vegetable oil, and pure vanilla extract. Mix well until fully blended.
- Add the all-purpose flour, unsweetened cocoa powder, baking soda, and fine salt to the same bowl. Stir until the mixture seems somewhat dry.
- Gently fold in the freshly grated zucchini until the batter comes together.
- Fold in the semi-sweet chocolate chips until evenly distributed.
- Transfer the brownie mixture to the prepared baking dish and spread the batter evenly.
Cooking
- Place the baking dish in the preheated oven and bake for 20-25 minutes, checking for doneness with a toothpick.
- Allow the brownies to cool completely in the pan.
Frosting Preparation
- In a medium bowl, sift together the confectioner’s sugar and additional cocoa powder. Gradually whisk in the warm milk and melted unsalted butter until smooth.
- Spread the frosting evenly on top of the cooled brownies.
- Let the frosting set for 10-15 minutes before cutting into squares and serving.
Notes
Serve warm with vanilla ice cream or enhance with fresh berries or a drizzle of chocolate syrup.
