Preparation
- Preheat the oven to 350 degrees F. Line an 8x8 baking pan with parchment paper and spray with baking spray.
- In a large bowl, mix the flour, sugar, cocoa powder, and salt.
- Blend the black beans with the water until smooth.
- In another bowl, combine 2/3 cup of black bean puree, oil, eggs, and vanilla extract.
- Pour the liquid ingredients into the dry ingredients and mix well.
Baking
- Pour the batter into the prepared pan and tap to remove air bubbles.
- Bake for 25 to 30 minutes until the edges are crispy and the center is set.
- Cool in the pan, then cut into 12 pieces.
Notes
Best served warm with low-calorie ice cream or Greek yogurt. Pairs well with fresh fruits for a healthy dessert platter. Can be stored for up to three days at room temperature or frozen for two months.
