Ingredients
  

Dry Ingredients
  • 1 cup flour You can use almond flour for a low-carb version.
  • 2 cups sugar Can reduce by substituting half with applesauce or banana.
  • 3/4 cup dark cocoa powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 7 ounces black beans (about 1/2 can) Blended until smooth.
  • 1/3 cup water
  • 1 tablespoon canola oil
  • 4 pieces eggs
  • 1 tablespoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350 degrees F. Line an 8x8 baking pan with parchment paper and spray with baking spray.
  2. In a large bowl, mix the flour, sugar, cocoa powder, and salt.
  3. Blend the black beans with the water until smooth.
  4. In another bowl, combine 2/3 cup of black bean puree, oil, eggs, and vanilla extract.
  5. Pour the liquid ingredients into the dry ingredients and mix well.
Baking
  1. Pour the batter into the prepared pan and tap to remove air bubbles.
  2. Bake for 25 to 30 minutes until the edges are crispy and the center is set.
  3. Cool in the pan, then cut into 12 pieces.

Notes

Best served warm with low-calorie ice cream or Greek yogurt. Pairs well with fresh fruits for a healthy dessert platter. Can be stored for up to three days at room temperature or frozen for two months.
