Frozen Yoghurt Bites

These refreshing frozen yoghurt bites are a healthy summer treat made from creamy Greek yogurt and fresh fruits, perfect for cooling off on hot days.

Ingredients
  

For the Base
  • 2 tablespoons clear honey Natural sweetener
  • 300 g Greek-style yogurt Thick yogurt for creamy texture
  • 300 g mixed fresh fruit (strawberries, blueberries, mango, kiwi), chopped into small pieces Blueberries left whole; use ripe fruits for sweetness
Optional Toppings
  • 100 g good-quality chocolate, broken into pieces For drizzling on top
  • 30 g granola Optional crunchy topping

Method
 

Preparation
  1. Line a large baking tray that fits comfortably in your freezer with greaseproof paper.
  2. In a bowl, mix together the honey and Greek yogurt until smooth and well combined.
  3. Gently fold in all your beautiful chopped fresh fruit.
  4. Using a large spoon, create 12 generous blobs of the yogurt and fruit mixture on your prepared tray.
  5. Place the tray in the freezer for 1 hour.
Optional Topping and Finalization
  1. After 1 hour of freezing, melt your chocolate.
  2. Drizzle the melted chocolate over the frozen yoghurt bites and sprinkle with granola if using.
  3. Pop back in the freezer for another 20 minutes to set the chocolate.
Serving
  1. Remove from the freezer and enjoy immediately, or transfer to an airtight container for longer storage.

Notes

These bites can be made with any fresh fruit. Adjust sweetness based on fruit ripeness. Store in an airtight container for up to one month.
