  • 4 slices sturdy bread (like brioche or whole wheat) Use any sturdy bread for best results.
  • 2 large eggs
  • 1/2 cup milk (whole or skim) Can substitute with any plant-based milk for a dairy-free option.
  • 1 teaspoon vanilla extract
  • a pinch salt
  • 2 ripe bananas (sliced)
  • 1 cup fresh blueberries
  • 1/2 cup walnuts (chopped)
  • as needed Butter or oil for frying Use the preferred frying medium.
  • to taste Maple syrup for serving (optional) Can substitute with honey or agave syrup.

Method
 

Preparation
  1. In a large mixing bowl, break the eggs and add the milk, vanilla extract, and a pinch of salt. Use a whisk or a fork to beat the mixture until it is smooth and well combined.
  2. Dip each slice of bread into the egg mixture, making sure both sides are coated. Let the excess drip off.
Cooking
  1. Place a frying pan or griddle over medium heat. Add a little butter or oil to coat the surface.
  2. Place each slice of the coated bread into the pan. Cook for about 2-3 minutes on one side until it gets golden brown. Flip the bread and cook for another 2-3 minutes on the other side.
  3. Once all the bread slices are cooked, remove them from the pan and place them on serving plates.
  4. Top each slice with sliced bananas, fresh blueberries, and chopped walnuts.
  5. Drizzle maple syrup on top if desired. Serve warm and enjoy your delicious breakfast!

Notes

This French toast is best served warm. Garnish with additional fresh fruit or a dusting of powdered sugar for an appealing presentation.
