For the Nougat Topping

  • 1/2 tbsp 1/2 tbsp corn syrup Helps with topping consistency.
  • 3 tbsp 3 tbsp heavy cream Adds rich texture.

Method
 

Preparation of Cookie Dough
  1. In a mixing bowl, combine the cold cubed butter and powdered sugar.
  2. Using a whisk, mix until it becomes light and fluffy.
  3. Add the beaten egg, almond flour, all-purpose flour, and salt.
  4. Mix until just combined; the dough should be soft yet firm.
  5. Wrap the dough in plastic wrap and refrigerate for about 30 minutes to 1 hour.
Making the Nougat Topping
  1. In a saucepan over medium heat, melt the unsalted butter, white sugar, honey, and corn syrup.
  2. Stir continuously until it begins to bubble.
  3. Remove from heat and add the heavy cream, stirring until smooth.
Finishing the Cookies
  1. Preheat your oven to 350°F (175°C).
  2. Roll the chilled dough into small balls and place on a baking sheet lined with parchment paper.
  3. Press down slightly to flatten them.
  4. Bake for about 10-12 minutes until the edges are golden brown.
  5. Allow to cool for a few minutes before topping with the nougat mixture.
