Making the Pizza Sauce
- In a blender or food processor, combine the drained whole tomatoes and minced garlic. Blend until smooth.
- In a pan, heat 1 tablespoon of olive oil over medium heat. Pour in the blended tomato mixture.
- Add white wine vinegar, dried oregano, salt, and black pepper to taste. Stir well.
- Let the sauce simmer for about 10 minutes until it thickens, stirring occasionally.
- Once done, set the sauce aside.
Assembling the Mini Halloween Pizzas
- Preheat your oven to 400°F (200°C).
- Brush both sides of the flour tortillas lightly with olive oil.
- Place the tortillas on a baking sheet.
- Spread a thin layer of pizza sauce on each tortilla, leaving a small edge.
- Cut the Mozzarella cheese slices into fun Halloween shapes (e.g., ghosts, bats, pumpkins) and place on top of the sauce.
- Cut the Cheddar cheese into small pieces and add for extra color.
- For eyes, cut the black olives in half and place them on the cheese.
- Sprinkle some shredded mozzarella cheese on top for extra gooeyness.
- Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for a minute, cut into smaller pieces if desired, and serve warm.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for about 3 days. Reheat in the oven until warm. For freezing, it's best to do so before baking. Assemble and freeze on a baking sheet, cover, then transfer to a freezer-safe bag. Bake directly from frozen, adding more time as needed.
