Easy Mini Halloween Pizzas

Ingredients
  

For the Pizza Sauce
  • 28 ounces whole tomatoes, drained
  • 2 cloves garlic, minced
  • 1 Tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
For the Pizzas
  • 3 10-inch flour tortillas See Tip 2
  • 2 teaspoons olive oil For brushing tortillas
  • 4 slices Mozzarella cheese Cut into Halloween shapes
  • 1 slice Cheddar cheese Cut into small pieces
  • 4 large black olives Cut in half for eyes
  • 1/4 cup pizza sauce
  • 2 Tablespoons shredded mozzarella cheese For extra gooeyness

Method
 

Making the Pizza Sauce
  1. In a blender or food processor, combine the drained whole tomatoes and minced garlic. Blend until smooth.
  2. In a pan, heat 1 tablespoon of olive oil over medium heat. Pour in the blended tomato mixture.
  3. Add white wine vinegar, dried oregano, salt, and black pepper to taste. Stir well.
  4. Let the sauce simmer for about 10 minutes until it thickens, stirring occasionally.
  5. Once done, set the sauce aside.
Assembling the Mini Halloween Pizzas
  1. Preheat your oven to 400°F (200°C).
  2. Brush both sides of the flour tortillas lightly with olive oil.
  3. Place the tortillas on a baking sheet.
  4. Spread a thin layer of pizza sauce on each tortilla, leaving a small edge.
  5. Cut the Mozzarella cheese slices into fun Halloween shapes (e.g., ghosts, bats, pumpkins) and place on top of the sauce.
  6. Cut the Cheddar cheese into small pieces and add for extra color.
  7. For eyes, cut the black olives in half and place them on the cheese.
  8. Sprinkle some shredded mozzarella cheese on top for extra gooeyness.
  9. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, let cool for a minute, cut into smaller pieces if desired, and serve warm.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for about 3 days. Reheat in the oven until warm. For freezing, it's best to do so before baking. Assemble and freeze on a baking sheet, cover, then transfer to a freezer-safe bag. Bake directly from frozen, adding more time as needed.
