Preparation
- Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- In a bowl, whisk together the cottage cheese and eggs until well combined.
- Stir in the shredded cheese and diced vegetables.
- Season the mixture with salt and pepper to taste.
- Pour the mixture evenly into the prepared muffin tin.
Baking
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Let cool for a few minutes before removing from the tin. Serve warm and enjoy!
