Main Ingredients
  • 1 cup bacon bits Use cooked bacon bits for convenience.
  • 8 large eggs
  • 1 cup cottage cheese Any type of cottage cheese can be used.
  • 1 1/4 cups Colby Jack cheese, shredded Reserve 1/4 cup for topping.
  • 1/2 teaspoon salt Adjust according to taste.
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • as needed cooking oil spray For greasing the muffin tin.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Spray a 12-cup muffin tin with cooking oil spray.
  2. Crack all 8 eggs into a large mixing bowl and beat them until fully mixed.
  3. Add 1 cup of cottage cheese and mix until slightly lumpy.
  4. Stir in 1 cup of shredded Colby Jack cheese, reserving 1/4 cup for topping.
  5. Add 1 cup of bacon bits, salt, pepper, and garlic powder. Combine thoroughly.
  6. Fill the muffin cups almost all the way, reserving space at the top.
  7. Sprinkle the reserved shredded Colby Jack on top.
Baking
  1. Bake in the preheated oven for 18 to 22 minutes, or until set and lightly golden.
  2. Let cool in the pan for 5 minutes, then remove and serve warm.

Notes

Store cooled egg bites in an airtight container in the fridge for up to 4 days. You can freeze them for up to 3 months for longer storage.
