Preparation
- Preheat your oven to 350°F (175°C). Spray a 12-cup muffin tin with cooking oil spray.
- Crack all 8 eggs into a large mixing bowl and beat them until fully mixed.
- Add 1 cup of cottage cheese and mix until slightly lumpy.
- Stir in 1 cup of shredded Colby Jack cheese, reserving 1/4 cup for topping.
- Add 1 cup of bacon bits, salt, pepper, and garlic powder. Combine thoroughly.
- Fill the muffin cups almost all the way, reserving space at the top.
- Sprinkle the reserved shredded Colby Jack on top.
Baking
- Bake in the preheated oven for 18 to 22 minutes, or until set and lightly golden.
- Let cool in the pan for 5 minutes, then remove and serve warm.
Notes
Store cooled egg bites in an airtight container in the fridge for up to 4 days. You can freeze them for up to 3 months for longer storage.
