Easy Cheesy Steak Quesadillas

Ingredients
  

Main Ingredients
  • 1 pound steak Lean cut preferred
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 4 pieces flour tortillas (burrito size)
  • 2 cups shredded cheddar cheese Can use low-fat for a healthier option.
  • 1 cup pico de gallo Freshly made for best flavor.

Method
 

Preparation
  1. Preheat the oven to 400 degrees F.
  2. Cut the steak into strips.
  3. Place the steak strips in a bowl with the spices and toss until coated.
Cooking
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Place the steak strips into the skillet and cook for 3-4 minutes per side until browned and cooked through.
Assembly and Baking
  1. Line a large baking sheet with silicone or parchment paper.
  2. Place the 4 tortillas on the baking sheet.
  3. Distribute about half of the cheese over half of each tortilla.
  4. Layer the steak, then pico de gallo, then the rest of the cheese.
  5. Fold the other half of the tortillas over the half with the steak and cheese.
  6. Bake the quesadillas for about 6 minutes, then flip each over and bake for another 6-7 minutes, until the cheese is melted and the outside of the tortillas is brown.

Notes

For an added healthy side, consider fresh-cut vegetables or a simple fruit salad. To store, let cool and place in an airtight container. Refrigerate for up to three days or freeze for up to three months.
