Preparation
- Preheat the oven to 400 degrees F.
- Cut the steak into strips.
- Place the steak strips in a bowl with the spices and toss until coated.
Cooking
- Heat the olive oil in a large skillet over medium-high heat.
- Place the steak strips into the skillet and cook for 3-4 minutes per side until browned and cooked through.
Assembly and Baking
- Line a large baking sheet with silicone or parchment paper.
- Place the 4 tortillas on the baking sheet.
- Distribute about half of the cheese over half of each tortilla.
- Layer the steak, then pico de gallo, then the rest of the cheese.
- Fold the other half of the tortillas over the half with the steak and cheese.
- Bake the quesadillas for about 6 minutes, then flip each over and bake for another 6-7 minutes, until the cheese is melted and the outside of the tortillas is brown.
Notes
For an added healthy side, consider fresh-cut vegetables or a simple fruit salad. To store, let cool and place in an airtight container. Refrigerate for up to three days or freeze for up to three months.
