Ingredients
  

Main Ingredients
  • 2 pieces ripe bananas Must be ripe for natural sweetness.
  • 2 tablespoons vegetable oil Can substitute with coconut oil for flavor.
  • 1 piece egg Can substitute with a flaxseed egg for vegan version.
  • 1.5 cups graham cracker crumbs, divided Used both in the dough and as topping.
  • 1 box white cake mix (16.25 ounces)

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mash the bananas until smooth.
  3. Add the vegetable oil and egg to the mashed bananas, mixing well to combine.
  4. Next, add 1 cup of graham cracker crumbs and the cake mix, stirring until the ingredients are thoroughly mixed.
  5. Using a medium cookie scoop, scoop the batter and place each scoop about 2 inches apart on a cookie sheet.
  6. Sprinkle the tops of the cookies with the remaining graham cracker crumbs.
Baking
  1. Bake the cookies in the preheated oven for 8 to 12 minutes, or until the bottoms are golden and tops are starting to brown.
  2. Allow the cookies to cool for 10 minutes before removing them from the baking sheet.

Notes

Store cookies in an airtight container at room temperature for up to three days. For longer storage, freeze individually wrapped cookies in a bag for up to three months.
