Method
 

Preparation
  1. Begin by bringing a large pot of salted water to a boil.
  2. Add 8 ounces of short pasta, cooking it according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  3. Cook the 8 slices of bacon in a skillet over medium heat until crispy. Once cooked, remove from the skillet, let cool, and break into bite-sized pieces.
  4. In a large mixing bowl, whisk together mayonnaise, sour cream, pickle brine, yellow mustard, and season with salt and sugar.
  5. To the bowl with the dressing, add the cooled pasta, crispy bacon, chopped pickles, diced cucumbers, mild cheese, chopped red onions, and fresh dill. Mix until evenly coated.
  6. Check for seasoning and add salt and pepper to taste.

Notes

This pasta salad can be served on its own or as a side at barbecues or potlucks. Serve in moderate portions and complement with light grilled chicken or fish.
