Preparation
- Begin by bringing a large pot of salted water to a boil.
- Add 8 ounces of short pasta, cooking it according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- Cook the 8 slices of bacon in a skillet over medium heat until crispy. Once cooked, remove from the skillet, let cool, and break into bite-sized pieces.
- In a large mixing bowl, whisk together mayonnaise, sour cream, pickle brine, yellow mustard, and season with salt and sugar.
- To the bowl with the dressing, add the cooled pasta, crispy bacon, chopped pickles, diced cucumbers, mild cheese, chopped red onions, and fresh dill. Mix until evenly coated.
- Check for seasoning and add salt and pepper to taste.
Notes
This pasta salad can be served on its own or as a side at barbecues or potlucks. Serve in moderate portions and complement with light grilled chicken or fish.
