Preparation
- Preheat your oven to 350°F (175°C). Lightly grease an 8×4 inch loaf pan and line with parchment for easy removal.
- Crack the eggs into a large bowl. Whisk until frothy and slightly thickened.
- Stir in the Greek yogurt and melted butter or coconut oil. Mix until smooth.
- Add the baking powder and salt, whisking gently to combine.
- Add the xanthan gum or psyllium husk powder and fold in the almond flour if using.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake in the preheated oven for 30–45 minutes. Check after 25 minutes; the loaf is done when a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool fully before slicing.
Notes
Store the cooled bread in an airtight container in the fridge for up to 5 days. To freeze, slice the bread and store in an airtight freezer bag for up to 3 months.
