Wet Ingredients
  • 6 large eggs A key ingredient for that light, fluffy texture!
  • 0.5 cup full-fat Greek yogurt Unsweetened and plain, adds creaminess without carbs.
  • 0.25 cup melted butter or coconut oil Adds richness and keeps the bread moist.
Dry Ingredients
  • 1 tablespoon baking powder Aluminum-free is best for a cleaner taste and better rise.
  • 0.25 teaspoon salt Enhances the overall flavor profile of the bread.
  • 0.5 teaspoon xanthan gum or psyllium husk powder Helps give structure without gluten.
  • 0.5 cup finely ground almond flour Use for added texture, optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×4 inch loaf pan and line with parchment for easy removal.
  2. Crack the eggs into a large bowl. Whisk until frothy and slightly thickened.
  3. Stir in the Greek yogurt and melted butter or coconut oil. Mix until smooth.
  4. Add the baking powder and salt, whisking gently to combine.
  5. Add the xanthan gum or psyllium husk powder and fold in the almond flour if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake in the preheated oven for 30–45 minutes. Check after 25 minutes; the loaf is done when a toothpick comes out clean.
  2. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool fully before slicing.

Notes

Store the cooled bread in an airtight container in the fridge for up to 5 days. To freeze, slice the bread and store in an airtight freezer bag for up to 3 months.
