  • 2 cups shredded boneless skinless chicken breasts
  • 8 oz cream cheese Cut into cubes
  • 15 oz can corn
  • 15 oz can black beans drained and rinsed
  • 15 oz can diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Method
 

Preparation
  1. In a crockpot, add the shredded chicken, corn, black beans, diced tomatoes, and seasonings.
  2. Pour in the chicken broth and stir to combine.
  3. Cut cream cheese into cubes and place on top of the mixture.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked and tender.
  2. Before serving, shred the chicken in the pot using two forks and mix everything together.

Notes

Serve warm topped with fresh cilantro, shredded cheese, or avocado. For spiciness, add jalapeƱos or hot sauce. Pairs well with tortilla chips or warm bread.
