Preparation
- Preheat your oven to 400°F (200°C) for optimal roasting temperature.
- Drain the canned chickpeas completely and rinse them thoroughly under cold running water.
- Spread chickpeas on kitchen towels and roll them to dry thoroughly. Allow to air dry for at least 10 minutes.
Mixing the Spice Blend
- In a large bowl, combine paprika, cumin, salt, black pepper, cayenne pepper, and garlic powder. Whisk until evenly distributed.
Oiling and Roasting
- Drizzle the dried chickpeas with olive oil and toss gently to ensure they are lightly coated.
- Spread chickpeas on a baking sheet in a single layer without overcrowding.
- Roast for approximately 30 minutes, shaking the pan every 10 minutes for even browning.
Seasoning
- Once roasted, immediately transfer the hot chickpeas to the bowl with the spice blend and toss vigorously to coat.
Notes
For extra-crispy results, roast for an additional 5-10 minutes. These chickpeas are best enjoyed fresh but can be stored in an airtight container for up to 5 days.
