Ingredients
  

For the Chickpea Base
  • 2 15-ounce cans canned chickpeas Or 1 cup dried chickpeas, soaked overnight
  • ¼ cup extra virgin olive oil For roasting
For the Perfect Spice Blend
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt or kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper Adjust for spiciness
  • ½ teaspoon garlic powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) for optimal roasting temperature.
  2. Drain the canned chickpeas completely and rinse them thoroughly under cold running water.
  3. Spread chickpeas on kitchen towels and roll them to dry thoroughly. Allow to air dry for at least 10 minutes.
Mixing the Spice Blend
  1. In a large bowl, combine paprika, cumin, salt, black pepper, cayenne pepper, and garlic powder. Whisk until evenly distributed.
Oiling and Roasting
  1. Drizzle the dried chickpeas with olive oil and toss gently to ensure they are lightly coated.
  2. Spread chickpeas on a baking sheet in a single layer without overcrowding.
  3. Roast for approximately 30 minutes, shaking the pan every 10 minutes for even browning.
Seasoning
  1. Once roasted, immediately transfer the hot chickpeas to the bowl with the spice blend and toss vigorously to coat.

Notes

For extra-crispy results, roast for an additional 5-10 minutes. These chickpeas are best enjoyed fresh but can be stored in an airtight container for up to 5 days.
