Preparation
- Start by washing the potatoes well. Do not peel them. Leave the skin on for extra texture and flavor.
- Place each potato on a cutting board. Use a sharp knife to make deep cuts across the potato, stopping before cutting all the way through. Space the cuts about 1/4 inch apart.
- Drizzle olive oil over each potato, ensuring it gets into the cuts to help them become crispy.
- Sprinkle salt and pepper all over the potatoes, getting some into the cuts as well.
Baking
- Preheat your oven to 425°F (220°C). Place the potatoes on a baking sheet and bake for about 35-40 minutes or until they are tender and crispy.
- Once the potatoes are cooked, carefully add shredded cheese and crumbled bacon into each cut. Return to the oven for about 5-10 minutes, or until the cheese is melted.
Serving
- Remove the potatoes from the oven and drizzle sour cream over each potato, adding chopped chives or green onions on top.
- Let the potatoes cool for a few minutes before serving.
Notes
You can store leftover potato bites in an airtight container in the fridge for about 3 days. Reheat in the oven to keep them crispy. To freeze, cool completely, freeze in a single layer, then transfer to a freezer bag for up to 3 months.
