Ingredients

Main Ingredients
  • 6 medium-sized medium-sized potatoes You can use any type you like.
  • 1/4 cup olive oil
  • 1 cup shredded cheese Cheddar or your favorite type.
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 1/4 cup chopped chives or green onions
  • Salt and pepper To taste.

Method

Preparation
  1. Start by washing the potatoes well. Do not peel them. Leave the skin on for extra texture and flavor.
  2. Place each potato on a cutting board. Use a sharp knife to make deep cuts across the potato, stopping before cutting all the way through. Space the cuts about 1/4 inch apart.
  3. Drizzle olive oil over each potato, ensuring it gets into the cuts to help them become crispy.
  4. Sprinkle salt and pepper all over the potatoes, getting some into the cuts as well.
Baking
  1. Preheat your oven to 425°F (220°C). Place the potatoes on a baking sheet and bake for about 35-40 minutes or until they are tender and crispy.
  2. Once the potatoes are cooked, carefully add shredded cheese and crumbled bacon into each cut. Return to the oven for about 5-10 minutes, or until the cheese is melted.
Serving
  1. Remove the potatoes from the oven and drizzle sour cream over each potato, adding chopped chives or green onions on top.
  2. Let the potatoes cool for a few minutes before serving.

Notes

You can store leftover potato bites in an airtight container in the fridge for about 3 days. Reheat in the oven to keep them crispy. To freeze, cool completely, freeze in a single layer, then transfer to a freezer bag for up to 3 months.
