Preparation
- Heat about 1 tablespoon of oil in a large skillet over medium heat. Add chopped onions and cook until softened, about 2-3 minutes.
- Add in the ground beef, breaking it up while cooking until most of it is browned, about 4-5 minutes.
- Mix in the tomato paste and taco seasoning. Stir in water or beef broth if filling appears dry and cook until beef is fully cooked and most liquid has evaporated, about 3-4 minutes. Season with salt, if needed. Set aside to cool.
- On a clean surface, place a tortilla. On the top half, layer 1 1/2 to 2 tablespoons of mozzarella cheese, spoon a portion of beef filling, and top with more cheese. Fold the bottom half of the tortilla over and gently press to seal.
- Transfer assembled tacos to a large baking sheet. Repeat with remaining ingredients for a total of 8 tacos.
Cooking
- Heat 3-4 tablespoons of oil in a large skillet over medium heat. Pan-fry tacos in batches for about 1 minute per side until golden brown. Transfer to a wire cooling rack over a baking sheet.
Serving
- Garnish tacos with fresh cilantro and serve immediately while hot and crispy with favorite sauces.
Notes
For healthy eating, enjoy tacos with a simple side salad. Store leftovers in an airtight container for 3-4 days. You can also freeze the beef filling for up to 3 months.
