  • 2 slices slices of bread (your choice: whole grain, sourdough, etc.)
  • 200 g kale, chopped
  • 1 can (400g) of white beans (like cannellini or butter beans), drained and rinsed
  • 2 cloves of garlic, minced
  • 200 ml of cream (or a plant-based cream for a vegan option)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional: Red pepper flakes for a spicy kick

Preparation
  1. Start by washing the kale under cold running water. Chop it into small pieces and set it aside.
  2. In a frying pan, heat a tablespoon of olive oil over low to medium heat.
  3. Once the oil is warm, add the minced garlic. Cook it for about a minute until it is fragrant but not browned.
  4. Add the chopped kale to the pan and stir gently. Cook it for about 3-4 minutes until it wilts down.
  5. Next, add the drained beans to the pan. Stir everything together so the beans mix with the kale and garlic.
  6. Pour in the cream, stirring everything well. Cook for another 5 minutes, allowing the cream to thicken a bit.
  7. Season the mixture with salt and pepper to taste. If you like a bit of heat, add some red pepper flakes at this stage too.
  8. While the kale and beans cook, toast your bread in a toaster or grill until golden brown.
  9. Once the toast is ready, place it on a serving plate.
  10. Finally, spoon the creamy kale and beans mixture generously over the toasted bread. Enjoy your delicious meal!

Notes

Best served hot. Optional toppings include sliced avocado, fresh herbs, or a squeeze of lemon juice for extra flavor.
