  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons Cajun spice mix
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream Can substitute with lighter alternatives
  • 1 cup shredded mozzarella cheese
  • 8 oz spaghetti Can be substituted with whole wheat or gluten-free pasta
  • to taste Salt and pepper
  • for garnish Fresh parsley Optional

Method
 

Cooking Spaghetti
  1. Cook spaghetti according to package instructions; drain and set aside.
Preparing Chicken
  1. Season the chicken breasts with Cajun spice, salt, and pepper.
  2. In a skillet, heat olive oil over medium heat and add the chicken. Cook for about 6-7 minutes on each side or until fully cooked. Remove from pan and let rest.
Making the Sauce
  1. In the same skillet, add minced garlic and sauté until fragrant.
  2. Pour in heavy cream, stirring to combine, and bring to a simmer.
  3. Add mozzarella cheese, stirring until melted and smooth.
Combining Ingredients
  1. Slice the cooked chicken and return to the skillet.
  2. Toss the cooked spaghetti in the sauce, combining everything well.
Serving
  1. Serve hot, garnished with fresh parsley if desired.

Notes

This dish can be served with a light salad dressed with lemon vinaigrette or steamed vegetables for a balanced meal. Leftovers can be refrigerated for up to 3 days or frozen for up to two months.
