Cranberry Brie Bites

These little puff pastry cups filled with gooey brie and tangy cranberry sauce are an easy and impressive appetizer for any occasion.

Ingredients
  

Pastry and Cheese
  • 1 package Puff pastry sheets, thawed but still cold
  • 8 oz Brie cheese, rind on or off, cut into small cubes
Toppings
  • 1/2 cup Cranberry sauce, whole berry or homemade
  • 2 tbsp Fresh rosemary or thyme, finely chopped
  • 1 tbsp Honey or orange zest For added brightness
  • 1/4 cup Chopped pecans or pistachios Optional for crunch
For the muffin pan
  • 1 tbsp Nonstick spray or butter For greasing the muffin tin

Method
 

Preparation
  1. Preheat the oven to 375°F and grease a mini muffin pan. Keep your pastry in the fridge until the last moment.
  2. Cut the pastry into small squares and press each square into the muffin cups to form little pastry baskets.
  3. Drop a cube of brie into each cup. Add a small spoonful of cranberry sauce on top, being careful not to overload.
  4. Sprinkle with herbs, add a drizzle of honey if desired, and finish with nuts for crunch.
  5. Bake for 12 to 15 minutes until the pastry is golden and the brie is melty. Let them cool for a couple of minutes before serving.

Notes

For best results, keep the pastry cold while working. If needed, chill the tray for 5 minutes before baking. Leftovers can be reheated in a 325°F oven for 5 to 8 minutes.
