Preparation
- Preheat the oven to 375°F and grease a mini muffin pan. Keep your pastry in the fridge until the last moment.
- Cut the pastry into small squares and press each square into the muffin cups to form little pastry baskets.
- Drop a cube of brie into each cup. Add a small spoonful of cranberry sauce on top, being careful not to overload.
- Sprinkle with herbs, add a drizzle of honey if desired, and finish with nuts for crunch.
- Bake for 12 to 15 minutes until the pastry is golden and the brie is melty. Let them cool for a couple of minutes before serving.
Notes
For best results, keep the pastry cold while working. If needed, chill the tray for 5 minutes before baking. Leftovers can be reheated in a 325°F oven for 5 to 8 minutes.
