Method
 

Preparation
  1. Combine cottage cheese, peanut butter, honey (or maple syrup), and vanilla extract in a blender or food processor.
  2. Blend until smooth and creamy.
  3. Taste and adjust sweetness, adding more honey or syrup if desired.
Chilling
  1. Spoon the mousse into serving dishes and refrigerate for at least 30 minutes to chill.

Notes

Store in an airtight container in the refrigerator for up to 3 days. Can be frozen for a month, but texture may change slightly upon thawing.
