Flatbread Base
  • 1 cup cottage cheese Use full-fat for best texture.
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian herb mix Can substitute with oregano and basil.
Toppings
  • 2/3 cup pizza sauce
  • 3.5 ounces grated cheese Choose Gouda, Edam, or mozzarella.
  • 2 ounces pepperoni Can swap for other cured meats.

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. In a blender, combine cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix; blend until smooth.
  3. Line a baking sheet with parchment paper and pour the mixture onto it; spread into a thin circle.
  4. Bake for 30 minutes or until golden brown.
Topping and Final Bake
  1. Increase oven temperature to 400°F (200°C).
  2. Spread pizza sauce over the baked flatbread, top with grated cheese and pepperoni.
  3. Bake for an additional 8-10 minutes until cheese is melted and bubbly.

Notes

Let the pizza rest for 2-3 minutes after baking. Pairs well with salads or as finger food for parties. Store leftovers in an airtight container for up to 3 days or freeze for up to 1 month.
