Dough Ingredients
  • 1 cup cottage cheese Can use low-fat for a lighter option.
  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt Add extra salt or herbs if desired.
  • 1/4 cup milk For softer bread, can add an extra tablespoon.
  • 1 tablespoon olive oil
  • 1 large egg Can replace with a flax egg.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine cottage cheese, flour, baking powder, and salt.
  3. Add milk, olive oil, and egg to the mixture and stir until a soft dough forms.
  4. On a floured surface, knead the dough lightly until smooth.
  5. Roll out the dough to your desired thickness.
Baking
  1. Place the rolled dough on a baking sheet and bake for about 15-20 minutes, or until golden brown.
  2. Allow to cool slightly before serving.

Notes

Serve the flatbread warm. It can be sliced for sandwiches or folded for wraps. Pairs well with olive oil, soft cheese, and a green salad. Store in an airtight bag for up to two days at room temperature or refrigerate for up to five days. For longer storage, freeze for up to three months.
