- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a blender or food processor, blend the cottage cheese and eggs until smooth.
- In a bowl, combine almond flour, baking powder, and a pinch of salt.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Spoon the mixture onto the prepared baking sheet in rounds, forming about 6 to 8 pieces.
- Bake for 25-30 minutes or until the tops are golden brown.
- Allow to cool slightly before serving.
Notes
Serve this bread warm or at room temperature. It can be spread with butter or cream cheese or used as a sandwich layer. Store in an airtight container in the refrigerator for 3-4 days or freeze for up to 1 month.
