  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 teaspoon baking powder

Preparation
  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a blender or food processor, blend the cottage cheese and eggs until smooth.
  3. In a bowl, combine almond flour, baking powder, and a pinch of salt.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Spoon the mixture onto the prepared baking sheet in rounds, forming about 6 to 8 pieces.
  6. Bake for 25-30 minutes or until the tops are golden brown.
  7. Allow to cool slightly before serving.

Notes

Serve this bread warm or at room temperature. It can be spread with butter or cream cheese or used as a sandwich layer. Store in an airtight container in the refrigerator for 3-4 days or freeze for up to 1 month.
