  • 4 pieces boneless, skinless chicken breasts Choose similar sizes for even cooking.
  • 1 cup cottage cheese Use full-fat or low-fat.
  • ¼ cup grated Parmesan cheese
  • ¼ cup chicken broth Can substitute water if necessary.
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Lightly spray an 8×8-inch baking dish with olive oil.
Making the Sauce
  1. Add cottage cheese, Parmesan, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper to a blender. Blend for 30–45 seconds, scraping down sides as needed, until completely smooth and creamy.
Assembling
  1. Place chicken breasts in the prepared baking dish. Pour the blended sauce evenly over the chicken, ensuring each piece is fully coated.
Baking
  1. Bake uncovered for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling with light golden spots on top.
Finishing Touch
  1. Let the dish rest for 5 minutes before serving to allow juices to redistribute. Garnish with fresh parsley or chives if desired.

Notes

Serve this chicken bake hot with options like steamed green beans, a simple mixed salad, or rice. Leftovers can be stored in the fridge for up to 3 days.
