  • 4 pieces boneless, skinless chicken breasts
  • 2 cups cornflakes, crushed
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Cooking spray or olive oil for coating

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a shallow bowl, mix together flour, salt, pepper, garlic powder, and onion powder.
  3. In another bowl, beat the eggs.
  4. Place the crushed cornflakes in a third bowl.
  5. Dip each chicken breast first in the flour mixture, then in the beaten eggs, and finally coat with cornflakes, pressing down to adhere.
  6. Place the coated chicken breasts on the prepared sheet pan and spray lightly with cooking spray or drizzle with olive oil.
Cooking
  1. Bake for 25-30 minutes, or until the chicken is cooked through and the coating is crispy.
  2. Serve warm.

Notes

For a balanced meal, serve with steamed vegetables or a fresh salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
