Preparation
- Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a shallow bowl, mix together flour, salt, pepper, garlic powder, and onion powder.
- In another bowl, beat the eggs.
- Place the crushed cornflakes in a third bowl.
- Dip each chicken breast first in the flour mixture, then in the beaten eggs, and finally coat with cornflakes, pressing down to adhere.
- Place the coated chicken breasts on the prepared sheet pan and spray lightly with cooking spray or drizzle with olive oil.
Cooking
- Bake for 25-30 minutes, or until the chicken is cooked through and the coating is crispy.
- Serve warm.
