Ingredients
  

Dry Ingredients
  • 3/4 cup cornmeal Use fresh cornmeal for optimal taste.
  • 1/4 cup flour All-purpose or whole wheat can be used.
  • 3 tablespoons sugar Reduce for a lighter version.
  • 2 teaspoons baking powder Ensure it's fresh for best rise.
  • 1/4 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 stick butter, melted Can use a lower-fat substitute.
  • 15 ounces corn, 1 can, drained
  • 15 ounces cream corn, 1 can
  • 1 cup sour cream Greek yogurt can be substituted.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. Mix well.
  3. Add in the eggs and melted butter, then stir in both types of corn and the sour cream. Mix until thoroughly combined.
  4. Pour the mixture into a 9×13 casserole dish that is lightly sprayed with non-stick cooking spray.
Cooking
  1. Bake in the preheated oven for 45-50 minutes, until the edges start to brown.

Notes

To store, cool completely and place in an airtight container for up to three days. For freezing, use a heavy-duty freezer container for up to three months. Reheat in the oven or microwave.
