Preparation
- Preheat your oven to 350 degrees F.
- In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. Mix well.
- Add in the eggs and melted butter, then stir in both types of corn and the sour cream. Mix until thoroughly combined.
- Pour the mixture into a 9×13 casserole dish that is lightly sprayed with non-stick cooking spray.
Cooking
- Bake in the preheated oven for 45-50 minutes, until the edges start to brown.
Notes
To store, cool completely and place in an airtight container for up to three days. For freezing, use a heavy-duty freezer container for up to three months. Reheat in the oven or microwave.
