Ingredients
  

Wet Ingredients
  • 2 cups cottage cheese
  • 1/4 cup melted butter
  • 3 pieces eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional) Add for a crunchy texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the cottage cheese, melted butter, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until combined.
  5. If using, fold in the chopped nuts.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 45-50 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  2. Allow to cool before slicing and enjoy your warm cinnamon roll loaf!

Notes

Serve slices warm or at room temperature. For added flavor, a light spread of butter or a thin glaze of powdered sugar and milk works well.
