Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix together the cottage cheese, melted butter, eggs, and vanilla until well combined.
- In another bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until combined.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 45-50 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and enjoy your warm cinnamon roll loaf!
Notes
Serve slices warm or at room temperature. For added flavor, a light spread of butter or a thin glaze of powdered sugar and milk works well.
