Ingredients
  

Macaron Shells
  • 100 grams egg whites, room temperature
  • 1/4 teaspoon cream of tartar
  • 60 grams granulated sugar
  • 110 grams almond flour, sifted
  • 200 grams powdered sugar, sifted
  • 2-3 drops red food coloring
Buttercream Filling
  • 113 grams unsalted butter, room temperature
  • 180 grams powdered sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon heavy cream, as needed for consistency
  • 140 grams apple butter

Method
 

Preparation
  1. Sift almond flour and powdered sugar into a large bowl and set aside.
  2. In a stand mixer with a whisk attachment, whisk egg whites on medium speed until foamy, then add cream of tartar.
  3. Increase to medium-high speed and gradually add granulated sugar. Whisk on high until soft peaks form.
  4. Add food coloring and whisk until stiff peaks form.
  5. Gently fold in dry ingredients until the batter reaches a 'flowing lava' consistency.
  6. Line a baking sheet with a silicone mat or parchment paper and pipe 1-inch rounds.
  7. Let sit at room temperature for 30-40 minutes until glossy and a skin forms.
Baking
  1. Preheat the oven to 300°F (150°C).
  2. Bake for 13-15 minutes. Let cool completely.
Buttercream Preparation
  1. For the buttercream, cream butter and powdered sugar, then mix in cinnamon, vanilla, and cream until fluffy.
Assembly
  1. Pipe buttercream on one shell, add apple butter, and sandwich with another shell.
  2. Store in an airtight container in the fridge for 12-24 hours before serving.

Notes

Macarons can be served with coffee or tea and make for an impressive dessert display. For best flavor, allow them to sit before serving.
