Preparation
- Preheat your oven to 325 degrees F (162 degrees C).
- Grate the zucchini to yield about 1 1/2 cups.
- In a large mixing bowl, combine the grated zucchini, chocolate cake mix, Greek yogurt, eggs, and milk. Stir until well mixed. Add in about 3/4 of the mini morsels.
- Spray the bottom of a 9×13 inch cake pan with cooking spray.
- Pour the cake mixture into the prepared pan and sprinkle the remaining mini morsels evenly on top.
Baking
- Bake in the preheated oven for about 30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely. Optionally, sprinkle with graham cracker crumbs before serving.
Notes
This cake can be served with whipped cream or low-calorie ice cream. Pair with fresh berries for added nutrition.
