Chocolate Strawberry Yogurt Clusters

Ingredients
  

For the clusters
  • 1.5 cups chopped strawberries Fresh strawberries, chopped
  • 1 cup plain Greek yogurt
  • 1 tbsp honey Adjust based on sweetness preference
  • 1 tsp vanilla extract For flavor
For the chocolate coating
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil Helps to smoothen the chocolate

Method
 

Preparation
  1. In a large bowl, add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Combine thoroughly.
  2. Using a spoon, scoop about 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet to form clusters. You should be able to make about 10 clusters.
Freezing
  1. Place the baking sheet in the freezer and let the yogurt clusters freeze for about 1-2 hours, or until they are completely frozen.
Coating
  1. Melt the chocolate by adding the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 15 to 30-second intervals, stirring in between until melted.
  2. Remove the frozen yogurt clusters from the freezer. Carefully dip each one into the melted chocolate, using a spoon for thorough coating. Once coated, place each cluster back on the prepared baking sheet.
  3. Optionally, sprinkle a bit of sea salt on top.
Final Freezing
  1. Return the clusters to the freezer for a few more minutes until the chocolate hardens. Enjoy!

Notes

These clusters can be stored in an airtight container in the freezer for up to a month. Let them soften for a few minutes before enjoying.
