Preparation
- Cut the chicken breasts into small pieces and season with salt, pepper, ground cumin, and smoked paprika.
Cooking the Chicken
- Heat a tablespoon of olive oil in a large saucepan over medium heat.
- Add the chicken pieces and cook until golden brown, about 5 to 7 minutes. Remove and set aside.
Sautéing Onions and Garlic
- In the same pot, add more olive oil if needed, then sauté the chopped onion for about 3 to 4 minutes until translucent.
- Add minced garlic and cook for another minute, being careful not to burn it.
Cooking Bulgur Wheat
- Add the bulgur wheat to the pot and stir to coat.
- Pour in the chicken broth, bring to a boil, then lower the heat and simmer.
Combining Ingredients
- After 10 minutes, return the cooked chicken to the pot. Stir and cover to cook for another 10 to 12 minutes, until bulgur is tender.
Serving
- Remove from heat and fluff the pilaf with a fork. Garnish with fresh parsley if desired.
Notes
For variations, consider swapping chicken for turkey or tofu, and adding vegetables for extra nutrition. Can be customized for meal prep as well.
