  • 1 lb carrots, peeled and sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter For dotting on top
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil. Add the sliced carrots and blanch for 5 minutes, then drain.
  3. In a large mixing bowl, combine the heavy cream, minced garlic, shredded cheese, and half of the Parmesan cheese. Season with salt and pepper.
Assembly and Baking
  1. Layer the blanched carrots in a greased baking dish. Pour the cream and cheese mixture over the carrots.
  2. Sprinkle the remaining Parmesan cheese on top and dot with butter.
  3. Bake in the preheated oven for 25-30 minutes until the top is golden and bubbly.
  4. Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.

Notes

Great for meal prep! You can prepare it a day in advance and simply reheat before serving. This dish pairs beautifully with grilled chicken or baked fish for a complete meal.
