Preparation
- Preheat the oven to 375°F (190°C).
- In a large pot, bring salted water to a boil. Add the sliced carrots and blanch for 5 minutes, then drain.
- In a large mixing bowl, combine the heavy cream, minced garlic, shredded cheese, and half of the Parmesan cheese. Season with salt and pepper.
Assembly and Baking
- Layer the blanched carrots in a greased baking dish. Pour the cream and cheese mixture over the carrots.
- Sprinkle the remaining Parmesan cheese on top and dot with butter.
- Bake in the preheated oven for 25-30 minutes until the top is golden and bubbly.
- Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
Notes
Great for meal prep! You can prepare it a day in advance and simply reheat before serving. This dish pairs beautifully with grilled chicken or baked fish for a complete meal.
