Preparation
- Take a dumpling wrapper and gently roll it out to make it slightly larger, around 1/2 to 3/4 cm.
- Dip your index finger in a small bowl of water and run it around the edges of the wrapper.
- Place 1-2 heaping tablespoons of your chosen filling in the center of the wrapper.
- Carefully pleat the edges of the wrapper to close it.
Cooking
- Add 1 tablespoon of oil to a non-stick skillet over medium heat, and once hot, gently place the dumplings in the pan.
- Cook until the dumplings are lightly golden on the bottom.
- Pour in 3-4 tablespoons of water into the skillet, cover it with a lid, and allow the dumplings to steam for about 4-5 minutes.
- Uncover the skillet and sprinkle sesame seeds and chopped scallions on top.
- Continue to pan fry until all the water is gone, and the bottoms are crispy.
- Serve with Shanghai red vinegar or Chinese black vinegar and chili oil if desired.
Notes
For healthy variations, use lean meat or add more vegetables. These dumplings are great for meal prep and can be frozen uncooked.
