For the Cookies
  • 1 box chocolate cake mix Any flavor can be substituted.
  • 1/2 cup vegetable oil
  • 2 large eggs Can be replaced with applesauce or flaxseed mixture for a vegan option.
For the Topping
  • 1/2 cup green buttercream frosting Can use other frostings such as orange or purple for variations.
  • to taste chocolate chips Optional, for decoration.
  • to taste sprinkles Optional, for decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the chocolate cake mix, vegetable oil, and eggs until well combined.
  3. Spray a muffin tin with non-stick spray.
  4. Scoop the cookie dough into the muffin cups, filling each about 2/3 full.
Baking
  1. Bake for 10–12 minutes, or until the edges are set.
  2. Allow the cookie cups to cool completely.
  3. Once cooled, pipe or spoon green buttercream frosting into the center to resemble bubbling potions.
  4. Optionally, decorate with chocolate chips or sprinkles.

Notes

These cookies can be wrapped for gifts and are best enjoyed fresh. Store in an airtight container at room temperature for 3-4 days or freeze for longer storage.
