Preparation
- Preheat your oven to 180°C (356°F) and prepare a loaf tin with parchment paper or greasing.
- In a large mixing bowl, combine the mashed bananas, maple syrup, coconut oil, and grated carrots.
- Gradually mix in the self-raising flour, cinnamon, and pecans until well combined.
- Transfer the batter to the prepared loaf tin.
- If using, whisk together the topping ingredients until smooth.
Baking
- Bake the bread for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool before spreading the vegan cream cheese mixture on top. Garnish with additional pecans for extra crunch.
Notes
