Pasta and Sauces
  • 8 oz penne pasta Cook according to package instructions.
  • 2 cups heavy cream Can substitute with Greek yogurt for a lighter version.
  • 1 cup shredded cheese Either cheddar or mozzarella works well.
  • 1 tbsp Cajun seasoning
  • Salt to taste
  • Pepper to taste
Main Ingredients
  • 1 lb smoked sausage, sliced
  • 1 cup bell peppers, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil For sautéing.
  • Chopped parsley for garnish

Method
 

Cooking
  1. Cook the penne pasta according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
  3. Add chopped bell peppers and onion, and sauté until softened.
  4. Stir in minced garlic and cook for another minute.
  5. Add Cajun seasoning and mix well.
  6. Pour in the heavy cream and bring to a simmer.
  7. Stir in the cooked pasta and shredded cheese until everything is well coated and the cheese has melted.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped parsley and serve hot.

Notes

For a healthy serving, aim for one cup of pasta per serving. This dish can be adapted easily for meal prep or variations like using lentil pasta for a lower carb option.
