Method

Preparation
  1. Mix together the spice mix ingredients (smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper) in a small bowl and set aside.
  2. Wash and cut the potatoes into chips. Pat dry with paper towels to remove excess moisture.
  3. Place the chips in a large mixing bowl with 1 tablespoon of olive oil and half of the spice mix. Mix well to coat.
Cooking
  1. Arrange the potatoes on a baking tray or cook in an air fryer. Bake in a preheated oven at 200°C (390°F) for 30-40 minutes, or in the air fryer for about 20 minutes until golden and crispy.
  2. Heat the remaining tablespoon of olive oil in a frying pan over high heat. Add the beef mince, breaking it apart with a wooden spoon. Once browned, add the rest of the spice mix and continue cooking until darkened and excess moisture evaporates.
  3. In a small bowl, combine the burger sauce ingredients (mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika) and adjust seasoning as needed.
Assembly
  1. Divide the cooked potatoes among serving bowls. Fill with shredded lettuce, cooked beef mince, cheese, and pickle slices. Drizzle sauce over the top before serving.
