Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potato thoroughly and pierce it several times with a fork.
Baking and Cooking
  1. Bake the sweet potato for about 45-55 minutes until tender.
  2. While the sweet potato is baking, cook the bacon in a skillet over medium heat until crispy. Remove and crumble.
  3. In the same skillet, cook the eggs to your liking.
Serving
  1. Once the sweet potato is done, slice it open and fluff the interior.
  2. Top the sweet potato with the cooked eggs, crumbled bacon, and shredded cheese.
  3. Season with salt and pepper to taste. Serve warm.

Notes

Consider using turkey bacon for a healthier option. You can bake multiple sweet potatoes at once for meal prep. Store leftovers in an airtight container for up to three days. Variations can include spinach, avocado, or spices like paprika or chili powder.
