Preparation
- Place the beans in a pot over medium-high heat, cover with about an inch of water, and bring to a boil. Reduce heat and simmer until beans are tender, about 1 hour.
- Preheat oven to 325°F (160°C).
- In a pot, combine molasses, salt, pepper, mustard, ketchup, brown sugar, soy sauce, apple cider vinegar, and liquid smoke. Bring to a boil over medium heat.
- Drain the beans and place them in a casserole dish with the onion. Pour the molasses mixture over the beans and add enough water to cover them.
Baking
- Cover the casserole dish and bake for 3 to 3½ hours, checking periodically to ensure the beans do not dry out.
- If the liquid is not thick enough, uncover and bake for an additional 15 minutes.
- Garnish with chopped parsley if desired.
Notes
Serve with a light salad or steamed vegetables for a balanced meal. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
