  • 3 pieces ripe bananas, mashed Make sure the bananas are ripe for best flavor.
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar Can be substituted with applesauce for less sugar.
  • 1 large egg
  • 1 cup all-purpose flour Can be replaced with gluten-free flour blend.
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the vanilla extract, baking soda, and salt.
  5. Stir in the sugar and egg until combined.
  6. Gradually mix in the flour until just combined, then fold in the chocolate chips.
  7. Fill the muffin cups with the batter, about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let cool before serving.

Notes

Store in an airtight container at room temperature for about 3 days. Can be frozen for up to 3 months. To reheat, microwave for about 20 seconds.
