Preparation
- Preheat your oven to 375°F (190°C).
- Slice zucchini into thin rounds or half-moons, sprinkle with salt, and let them sit for about 10 minutes.

- In a large bowl, combine zucchini slices, sautéed garlic, shredded cheddar cheese, half of the grated Parmesan, breadcrumbs, a drizzle of olive oil, and season with salt and pepper. Mix well.
Baking
- Grease a baking dish with olive oil and transfer the zucchini mixture into it, spreading it evenly.
- Sprinkle the remaining Parmesan cheese on top and add more breadcrumbs if desired for extra crispiness.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and zucchini is tender.

- Let cool for a few minutes before serving. The cheese should be bubbly and melted.
