  • 3 medium Zucchini, sliced Choose firm zucchini for best results.
Cheeses
  • 1 cup Cheddar Cheese, shredded Feel free to mix with other cheeses.
  • 1/2 cup Parmesan Cheese, grated To be divided for topping.

  • 1 cup Breadcrumbs Can use gluten-free breadcrumbs.
  • 2 cloves Garlic, minced Sauté until fragrant.
  • 2 tablespoons Olive Oil Use for sautéing and greasing dish.
  • to taste Salt and Pepper Enhances the flavors.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchini into thin rounds or half-moons, sprinkle with salt, and let them sit for about 10 minutes.
  3. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1-2 minutes.
  4. In a large bowl, combine zucchini slices, sautéed garlic, shredded cheddar cheese, half of the grated Parmesan, breadcrumbs, a drizzle of olive oil, and season with salt and pepper. Mix well.
Baking
  1. Grease a baking dish with olive oil and transfer the zucchini mixture into it, spreading it evenly.
  2. Sprinkle the remaining Parmesan cheese on top and add more breadcrumbs if desired for extra crispiness.
  3. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and zucchini is tender.
Serving
  1. Let cool for a few minutes before serving. The cheese should be bubbly and melted.

Notes

This dish is versatile; can be served warm as a side or cut into squares for appetizers. Garnish with fresh herbs for added flavor.
