  • 2 pieces ripe pears, peeled and diced
  • 1 cup rolled oats
  • 1/2 cup ground almonds
  • 1/4 cup almond butter
  • 1/4 cup maple syrup (or honey)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped almonds (for topping, optional) For added crunch
  • 1/2 teaspoon baking powder
  • 1/4 cup non-dairy milk (or regular milk)

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) to ensure even baking.
  2. Grease your baking dish with almond butter or line it with parchment paper for easier removal.
  3. In a large bowl, combine rolled oats, ground almonds, baking powder, cinnamon, and salt. Mix well.
  4. In another bowl, whisk together almond butter, maple syrup, and non-dairy milk until smooth.
  5. Pour the wet mixture into the dry ingredients and stir until fully combined. The mixture will be thick.
  6. Fold in the diced pears until evenly distributed.
  7. Pour the mixture into the prepared baking dish and use a spatula to spread it evenly.
  8. Sprinkle chopped almonds on top if desired.
  9. Bake in the preheated oven for 25-30 minutes until golden brown and a toothpick comes out clean.
  10. Let the dish cool for about 10 minutes before cutting into squares.

Notes

These squares can be served warm or at room temperature. Serve with maple syrup or yogurt for added creaminess. Store leftovers in an airtight container for 2-3 days at room temperature, or freeze for up to 2 months.
