Ingredients
  

For the Bites
  • 1 sheet puff pastry, defrosted
  • 4 oz brie cheese use a small cheese wheel
  • 0.5 cup cranberry sauce store bought or homemade
  • to taste candied pecans optional garnish
  • to taste fresh rosemary sprigs optional garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Spray a mini muffin tin with cooking spray.
  2. If you want to make cutting the brie easier, place the wheel of brie in the freezer for 10-15 minutes.
Prepare the Puff Pastry
  1. Unroll the thawed puff pastry on a clean surface and cut it into 16 equal squares.
  2. Gently press each square into the prepared muffin tin to form cups.
Assemble the Bites
  1. Slice the chilled brie into small cubes and place one cube in the center of each puff pastry square.
  2. Spoon a small amount of cranberry sauce over each cube of brie.
Bake the Bites
  1. Place the muffin tin in the preheated oven and bake for about 15-18 minutes until golden brown and flaky.
Cool and Serve
  1. Let the bites cool for a few minutes before popping them out of the tin.
  2. Garnish with chopped candied pecans and fresh rosemary sprigs before serving.

Notes

Best served warm. They can be prepared ahead of time and stored in the refrigerator or frozen before baking. Reheat leftovers to maintain flakiness.
