Baked Butter Beans with Feta and Chorizo

  • 400 g can of butter beans, drained and rinsed
  • 150 g chorizo, diced
  • 100 g feta cheese, crumbled
  • 1 red onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 200°C (400°F).
  2. In a frying pan, heat the olive oil over medium heat and add the diced chorizo. Cook for about 5 minutes until crispy.
  3. Add the chopped red onion to the pan and cook for another 5 minutes until it becomes soft. Then, add the minced garlic and cook for an additional minute until fragrant.
  4. In your baking dish, combine the drained butter beans, the chorizo mixture, and the smoked paprika. Stir until well mixed.
  5. Crumble the feta cheese over the top of the mixture, spreading it evenly.
  6. Season with salt and pepper to taste, being mindful of the chorizo and feta's saltiness.
  7. Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbling.
  8. Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.

Notes

For leftovers, store in an airtight container in the fridge for up to 3 days, or freeze for about 2 months. Reheat in the oven at 180°C (350°F) for 10 minutes or until warmed through.
