Preparation
- Preheat the oven to 200°C (400°F).
- In a frying pan, heat the olive oil over medium heat and add the diced chorizo. Cook for about 5 minutes until crispy.
- Add the chopped red onion to the pan and cook for another 5 minutes until it becomes soft. Then, add the minced garlic and cook for an additional minute until fragrant.
- In your baking dish, combine the drained butter beans, the chorizo mixture, and the smoked paprika. Stir until well mixed.
- Crumble the feta cheese over the top of the mixture, spreading it evenly.
- Season with salt and pepper to taste, being mindful of the chorizo and feta's saltiness.
- Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbling.
- Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.
Notes
For leftovers, store in an airtight container in the fridge for up to 3 days, or freeze for about 2 months. Reheat in the oven at 180°C (350°F) for 10 minutes or until warmed through.
