Baked Brie Crostini with Pumpkin Butter

Ingredients
  

For the Crostini
  • 1 French baguette 1 French baguette, cut diagonally into 1/2" slices
  • 1 tablespoon Olive oil, for drizzling
For the Topping
  • 1 cup 1 cup homemade pumpkin butter (or use store bought)
  • 8 ounces 8 ounces brie cheese, cut into 2" slices
  • 1 tablespoon Hot honey, for serving
  • 1 teaspoon Sea salt, for serving
  • Thyme or sage for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange the sliced baguette on a baking sheet. Drizzle olive oil on both sides of the bread.
  3. Bake in the oven for about 5-7 minutes until the bread is lightly golden.
Assembly
  1. Carefully take the pan out of the oven. Spread each slice of crostini with pumpkin butter.
  2. Top each slice with a piece of brie cheese. Return the baking sheet to the oven and bake again for 7-8 minutes, or until the brie is melted and bubbly.
  3. When done, take the baking sheet out of the oven and move the crostini to a serving dish.
  4. Drizzle with hot honey and sprinkle with sea salt and fresh thyme or sage.
Serving
  1. Serve immediately and enjoy!

Notes

Best enjoyed warm. Consider serving with sliced apples or pears to complement the flavors. For make-ahead tips, keep crostini assembled in the fridge but bake fresh before serving.
