Ingredients
  

For the pikelets
  • 1.25 cups plain flour
  • 2.5 tsp baking powder Make sure it's still active!
  • 2 tbsp white sugar
  • 1 pinch salt
  • 1 large egg
  • 0.75 cups milk Full-fat preferred, but any type works.
  • 0.5 tsp vanilla extract Optional but recommended.
  • 2 tsp butter For cooking.
For serving
  • strawberry jam Traditional Australian topping.
  • whipped cream Traditional Australian topping.
  • extra butter Optional.

Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  2. Make a well in the center of your dry ingredients, add the egg, milk, and vanilla extract, and whisk until almost lump-free.
  3. Melt 1 teaspoon of butter in a non-stick pan over medium-high heat.
Cooking
  1. Drop approximately 2 tablespoons of batter into the pan for each pikelet.
  2. Cook until bubbles appear on the surface, wait until 4 or more bubbles pop (about 1.5 minutes), then flip and cook the other side for about 1 minute until golden.
  3. Remove finished pikelets to a plate and continue with the next batch.
Serving
  1. Serve warm piled high with generous amounts of strawberry jam and whipped cream.

Notes

Ensure batter consistency is key. Fresh batter only for the best results. Pan perfection is essential for golden pikelets. You can try flavor variations like cinnamon or blueberries.
