Apple Samoas

A delicious twist on the classic Samoa cookie using fresh apples, topped with coconut, almond butter, and chocolate.

Ingredients
  

Main ingredients
  • 1 apple 1 apple (Honeycrisp are my fave, but I also like Pink Lady) Any variety of apple can be used.
  • cup ⅓ cup unsweetened shredded coconut
  • 3 Tablespoons 3 Tablespoons almond butter or cashew butter (or seed butter of choice) Can substitute with peanut or sunflower seed butter.
  • ½ Tablespoon ½ Tablespoon maple syrup
  • 2 Tablespoons 2 Tablespoons chocolate chips Use dairy-free for a vegan option.
  • ½ teaspoon ½ teaspoon coconut oil For melting the chocolate.

Method
 

Preparation
  1. Cut the apple into ¼-inch thick slices and remove the core. You should be able to get 3-4 slices from one apple.
  2. In a bowl, mix together the shredded coconut, almond butter, and maple syrup until the mixture is fully combined.
  3. Spread the mixture evenly on top of each apple slice. Place the prepared slices on a sheet of parchment paper.
  4. In a small microwave-safe bowl, melt the chocolate chips with coconut oil. Stir until smooth.
  5. Drizzle the melted chocolate mixture over each apple slice.
  6. Put the apple slices in the freezer until the chocolate is firm, about 5-10 minutes.
  7. Once firm, take them out and enjoy your tasty Apple Samoas!

Notes

Apple Samoas are best enjoyed fresh. Keep leftovers in an airtight container in the fridge for a day or two. Freeze apple slices without chocolate for later use.
