Preparation
- Cut the apple into ¼-inch thick slices and remove the core. You should be able to get 3-4 slices from one apple.
- In a bowl, mix together the shredded coconut, almond butter, and maple syrup until the mixture is fully combined.
- Spread the mixture evenly on top of each apple slice. Place the prepared slices on a sheet of parchment paper.
- In a small microwave-safe bowl, melt the chocolate chips with coconut oil. Stir until smooth.
- Drizzle the melted chocolate mixture over each apple slice.
- Put the apple slices in the freezer until the chocolate is firm, about 5-10 minutes.
- Once firm, take them out and enjoy your tasty Apple Samoas!
Notes
Apple Samoas are best enjoyed fresh. Keep leftovers in an airtight container in the fridge for a day or two. Freeze apple slices without chocolate for later use.
