Muffin Base Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 large egg
  • 0.5 cups milk
  • 0.25 cups unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples (about 1 medium apple)
Streusel Topping Ingredients
  • 0.5 cups all-purpose flour
  • 0.25 cups packed light brown sugar
  • 0.25 teaspoon ground cinnamon
  • 0.25 cups unsalted butter, cold and cut into small pieces

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin pan with paper liners.
  3. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  4. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir just until moistened.
  6. Gently fold in the chopped apples.
Streusel Topping
  1. In a small bowl, combine the flour, brown sugar, and cinnamon.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
Baking
  1. Divide the muffin batter evenly among the 12 muffin cups.
  2. Sprinkle a generous amount of streusel topping over each muffin.
  3. Bake for 18-22 minutes or until a wooden skewer inserted into a muffin comes out clean.
  4. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.

Notes

These muffins are best served warm. You can enjoy them plain or with butter or honey. They also freeze well for up to 3 months.
